These are some simple, family favorites.

Shredded Beef Tacos

Chuck Roast (or your whatever beef roast is in your freezer - I can help you there if you are in need of one). Put frozen roast in crock pot on low for 8-10 hours with about 1/2 cup water or broth.

Remove bone and excess fat, shred beef

Add this awesome taco simmer sauce (comes in all sorts of flavors and degrees of heat) with shredded beef in crock pot

Leave on low for another 30 minutes to an hour

Serve with pico de gallo sauce (red onions, tomatoes, cilantro, lime juice, salt, pepper), avocado, taco shell of your choice.

Teriyaki Marinated Top Sirloin Steak and Round Steak

(I usually eye ball this recipe, feel free to adjust based on your preferences)

1/2-2/3 of a bottle soy sauce 

2-3 tbsp. of your choice of "sweet"  (I use brown sugar, honey or agave)

1 tbsp. minced garlic

1/2 to 1 tbsp. ginger (I have used dried too, might want to use less dried)

2 tbsp. lemon juice (I don't use this on the more tender cuts like t-bone, porterhouse, NY Strip or filet)

I like to marinate overnight, or at least 8 hours.  Grill or sear/bake in a cast iron skillet.  ENJOY!!

Calico Burgers

1 lb. ground beef

1/2 c. cooked rice

1/4 c. chopped onion

1/4 c. chopped green peper

1 tbsp dried parsley flakes

1 tsp salt

1/4 tsp garlic powder

Dash pepper


2/3 c. water

1/4 c. ketchup

3 tbsp chili sauce

1 tsp Worcestershire sauce

1/4 tsp dried basil

In a bowl, combine the first 7 ingredients.  Add beef, mix well.  Shape into four to six oval patties. Grill, uncovered, over medium-hot heat until the meat is no longer pink, about 15-20 minutes. Combine all sauce ingredients in a saucepan; simmer for 15 minutes. Serve with burgers.
